The brand new Meat Market run by Mr. Stuart McCullough and his Ag Foods classes has launched. McCullough has been selling meat items for several years, but this is the official start of the brand as merchandise and a menu have been made for customers and supporters. The options include many different sausages for dinner and breakfast with prices ranging from only $8-$10 for all items.
All of the options are sausage based meals and seasoned with expertise. Some of the top favorites on the menu include the Linguisa, Cajun, and the Italian sausages. McCullough stated, “All the seasoning and formulations come from different venues as the Cajun and Linguisa come from my professor, Doctor Jacobs who taught at Fresno State, as well as the Andouille I found online and changed it to make sure it was true a Cajun Sausage. The Italian sausage comes from a spark off the Alberti family recipes with the peppers that are grown locally and changed to the levels of things to meet the needs that I like better, and the breakfast sausages are one of the sausages that has sage in them that I found in a old recipe book. Sometimes we’ll add some heat to it for a more spicy breakfast.”
McCullough has been working with the community since the beginning of his teaching career. The main support and help is from his Ag Foods students as the whole classes focus on the making and processing of crops for spices, resources, and food. McCullough stated, “All the proceeds and profits made go into this classroom and for the kids. No money comes out of their pockets. The business pays for all the necessary materials for these kids to learn.”
When asked about the inspiration for the business McCullough stated, “I’ve always liked working in the meat lab at Fresno State when I was in college and the processing of the meat in order to make it into something tasteful and edible, along with the community here including the immigrants from Italy and Portugal who have traditions with making sausage. Being a part of the culture and community in this town has inspired this business the most.”
For the future McCullough plans on continuing the Meat Market, but he wants to keep it local and small. He stated, “We want to keep it at this size and scale so that we can cover more in the curriculum instead of being a ‘sausage plant.’ If we can sell 300-500 pounds a year and some merchandise, we can fund these kids so they can do great activities and that will be just fine.”
