Healthy Food Recipes for the New Year

Happy New Year! It’s 2021 which means it’s time for the yearly eating healthy New Year’s resolutions.

Eating healthy 24/7 can be a challenge. It takes a lot of dedication and hard work.  Anthony Victorino said, “I try every new year to eat healthy, but it only lasts for like a month.”

Because eating healthy can be tough for many people, but don’t worry, I have the Top 5 healthy food recipes for you to try.

  1. Gluten-Free Raisin Bread French Toast Casserole– This delicious breakfast dish serves nine people and only takes one hour to make. The recipe calls for nonstick cooking spray or unsalted butter to grease the pan, 12 slices of gluten-free cinnamon-raisin bread, 1 1/2 cups of milk, 1/2 cup maple sugar, 1 tablespoon pure vanilla extract, 4 large eggs, confectioner’s sugar to sprinkle on top (optional), and fresh large berries for topping.
  2. Fresh Spring Rolls– This light but filling meal feeds 10 people and takes about 40 minutes to make. The ingredients needed are 10 servings of baked tofu, 10 rice paper wrappers (10 inches in diameter), 1 head green leaf lettuce, 1 red or yellow bell pepper thinly sliced into long strips, 1 1/2 cups finely shredded purple cabbage, 1 1/2 cups shredded carrots, 1/2 an English cucumber thinly sliced into long strips (leave peels on), and 1/4 cup fresh mint leaves (torn). Top this with a side of peanut sauce and it’s all done!
  3. Spring Goddess Sandwich–  The spring goddess sandwich is a thick bagel sandwich stuffed with fresh greens and chickpeas. It only takes 20 minutes to make and serves two people. All that is needed to make this hefty sandwich is 1 batch vegan chickpea salad, 4 slices whole-grain bagels, 1 tablespoon Maille Mustard, 2 large lettuce leaves, 1 Turkish cucumber (thinly sliced), 1 carrot (thinly sliced), 4 radishes (thinly sliced), 1 sliced avocado, and a big handful of sprouts.
  4. Green Tea Noodles with Sticky Sweet Chili Salmon–  This plate of vibrant noodles paired with steamy salmon is a great and easy dish to cook for dinner. It only takes 30 minutes to make and can feed four people. The recipe calls for 1/2 cup peanut oil, 1 tablespoon finely chopped ginger, 3 long green shallots (thinly sliced), 1 finely grated lemongrass stalk (white part only),  1 1/2 tablespoon runny honey, 2 tablespoons extra  virgin olive oil, 80 g chili paste in soybean oil, 600 g whole skinless salmon fillet (pin-boned), 240 g packet dried green tea noodles, 1/3 cup lime juice, 2 1/2 teaspoon caster sugar, 2 teaspoons fish sauce, 1/2 teaspoon chili flakes, and toasted sesame seeds and shiso leaves to serve.
  5. Ricotta Dumplings with Orecchiette, Peas and Proscuitto–  It only takes 25 minutes to serve four people with this amazing ricotta dumpling meal. All that is needed to make it is 2 cups orecchiette pasta, 1/4 cup olive oil (plus extra to drizzle), 1 cup freshly frozen peas, 1/2 onion (thinly sliced), 1/4 cup dry white wine, 4 thin slices prosciutto, 2 tablespoons mint leaves, 250 g fresh ricotta, 2 tablespoons grated parmesan (plus extra to serve), 1/3 cup plain flour, 1 egg (plus one extra yolk), 2 tablespoons finely chopped flat-leaf parsley, and a large pinch freshly grated nutmeg.

Even though it can be hard to stick to a healthy diet, the main thing to keep in mind is that there are tons of healthy recipes out there that actually taste good and are great substitutes for any unhealthy junk food.  Start the year in a healthy way.
